Butternut Squash and Lentil Soup

This hearty soup is packed with fiber, vitamins, and protein to keep you full and energized.

Ingredients:

  • 1 butternut squash, peeled and cubed
  • 1 cup red lentils
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 4 cups vegetable broth
  • Olive oil, salt, and pepper

Instructions:

  1. In a pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  2. Stir in turmeric and cumin, then add butternut squash, lentils, and vegetable broth.
  3. Bring to a boil, then simmer for 20-25 minutes until squash is tender. Blend until smooth, or leave it chunky.

 

Baked Sweet Potato with Chickpea Topping

Sweet potatoes are rich in beta-carotene, while chickpeas provide plant-based protein—making this a perfect post-workout meal.

Ingredients:

  • 2 large sweet potatoes
  • 1 can chickpeas, drained
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 Tbsp olive oil
  • Salt and pepper

Instructions:

  1. Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-50 minutes until soft.
  2. Toss chickpeas with olive oil, paprika, and garlic powder. Roast for 20-25 minutes until crispy.
  3. Slice sweet potatoes open and top with roasted chickpeas.

 

Apple Cinnamon Quinoa Porridge

Quinoa is a healthy twist on traditional oatmeal. It adds a boost of protein to keep you satisfied throughout the morning.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups almond milk
  • 1 apple, diced
  • 1 tsp cinnamon
  • 1 Tbsp maple syrup (optional)

Instructions:

  1. Combine the quinoa, almond milk, and cinnamon in a pot. Bring to a boil, then simmer for 15 minutes.
  2. Add diced apple and cook for another 5 minutes. Sweeten with maple syrup if desired.
